Zurn Grease Traps There are two easy ways to size a Zurn Grease Trap:

Grease from restaurants and food processing, when it enters into the sewer or septic systems can accumulate and narrow drain pipes causing a complete blockage. When this brown grease, as it if referred to, gets into wastewater treatment facilities it is very slow to breakdown and can re-enter the environment as a potential hazard. Grease interceptors for restaurants are used to restrict flow from dishwashers and sinks where the water is redirected to a baffling area. Here the more buoyant grease rises and becomes trapped in the grease interceptor.

The sizing of grease traps is determined by the rate of the incoming flow measured in gallons per minute of GPM. The capacity required for the grease trap is directly related to the GPM in a ratio of twice the pound capacity to the GPM. For example a 10 GPM flow would require a 20-pound grease interceptor capacity. For determining the grease trap capacity for pot washing sinks the capacity of the sink must be determined in cubic inches by multiplying the length by width by depth. Then take the combined cubic inches of all compartments and divide by 231. After multiplying the total by 0.75, for displacement, that provides the GPM for that sink. When multiple sinks are being drained, use 100% for the first sink, 50% for the second and 25% for all others to determine the flow rate for the grease filter.
